Learn the essentials of Italian cuisine with Daniel Canzian

Discover the fundamentals of Italian cuisine in the center of Milan, directly from the professionals.


You will attend 4-5 hours a day of cooking classes under the instructions of chef Daniel Canzian and his team, in the beautiful kitchen of his stylish restaurant in the heart of Milan.


You will receive all the materials, apron, chef hat, a booklet with all the recipes and access to the exclusive Daniel x YougaWorld app where you can discover recipes and cooking tips even after your course. You will also receive a certificate of attendance upon completion of the course (only if all modules have been attended).


There will be events planned especially for you and your group and you can customise the experience with the add-ons of your choice.


Course format: 

The course is split over 3 weekends in September, with 4-5 hours of classes per day on Saturday and Sunday. We designed this especially for busy bees with demanding  Monday-to-Friday job: you won't need to take time off work to attend this course (unless you want to!).

You can choose to attend only 1 or 2 of the weekends, however spaces are limited and priority will be given to students attending the full course.

COOKING TECHNIQUES: SECRETS & TIPS

Steam cooking. Browning.

Wet cooking. Salt cooking. Vacuum cooking.

THE MEATS

The real Milanese cutlet, cooked as per tradition.

Veal ossobuco, learn to cook it according to the traditional recipe.

Meatballs & white meat.


2) Part 2: 14-15th September 2019

THE GEOMETRY OF PASTA

Semolina pasta. Fresh pasta.

The sauces. Perfect shape, perfect sauce.

FROM MARKET TO KITCHEN

There can be no good food without good shopping first: learn to assess quality at the market.

Seasonality, sustainability, territoriality.

3) Part 1: 21-22nd September 2019

DISCOVER THE MEDITERRANEAN

About Daniel

DANIEL CANZIAN

  

In the early years of his career, Daniel Canzian has been the Executive Chef at the «Marchesino» from 2008 and at the «Marchesi Group» from 2011. In the same year he also had the privilege of working with the famous French chef Michel Troisgros.


In 2013 Daniel realised his dream, opening his own restaurant, where he can expresses his idea of Italian and contemporary cuisine in every detail, from cooking to decor.
